Risotto
Risotto is an Italian dish made by simmering vegetable stock with stock until it becomes creamy. Risotto should spread out into a velvety, rich and creamy pool when served on a plate. Since there are only a few ingredients, the cooking process is emphasized: slowly ladling in heated stock to a pan full of rice, stirring until the stock is absorbed, ladling in more stock, and repeating. Although the rice can provide a neutral background to whatever you have on hand in the fridge – whether it's a bit of leftover bacon or some stunning fresh herbs - the meal is commonly completed with butter and freshly grated Parmesan to really spice up the creamy flavor.
